teriyaki salmon

I defrosted one of my salmon popsicles and it turned out ok. The texture is not the same as fresh, but that could be due to the fact that made quite a mess of filleting my salmon. I will have to see what the next one is like. Nonetheless I had a very lovely dinner of salmon teriyaki with steamed green beans.

Teriyaki salmon

1 clove garlic minced
1 small nub of ginger minced (to taste)
Ponzu sauce or Soy sauce
1 tbsp honey
sesame oil - dash 
squeeze of fresh lemon or orange juice (1 tbsp)

Mix the ingredients in a shallow bowl. Marinate the salmon fillet for at least 30 mins in the fridge. Heat a grill pan on high, spray with oil or Pam.  Turn down heat to Medium, and cook salmon on both sides until done.  If there is any remaining marinade, bring it to a boil after removing cooked salmon to plate. Spoon heated marinade over the fish. Serve with steamed green beans and rice if you like.
